Shot on location by Paul Van Kan in Sydney Australia we hooked up with the team of culinary geniuses at Noma to shoot for an editorial piece for the New York Times. We followed them around on their journey forraging for ingredients and inspiration. Up before dawn most days, the team head out and scour the land, from the hillsides of Bondi Beach, right out to the Blue Mountains and the quiet neighbourhoods in between to gather wild edibles. The ingredients they find form the menu for the day and it is with these wild ingredients and the creative mind of René Redzepi, the chef who has powered Noma to global fame over the last decade, Noma has been awarded best restaurant in the world several times.
